This article examines the change of the mass fraction of inulin in Jerusalem artichoke tubers during storage under different conditions. The influence of temperature, storage time and variety features on the content of inulin have been shown. The terms and conditions of storage of raw materials before processing have been set.
In the article we have studied the effect of vibration on the extraction process of inulin from Jerusalem artichoke tubers. The dependence of the output of inulin on the duration and frequency of exposure has been indicated. We have also identified the perspectives of using this technology for the extraction of inulin from plant material
In the article we have investigated the variation mass proportion of reducing sugars in the extracts in hydrolysis of inulin. The influence of temperature, pH and substrate hydrolysis time on the activity of enzyme preparation "Biobar K-1." We have also determined the optimal technological parameters of the process
