MATHEMATICAL MODELING IN TECHNOLOGY AND QUALITY EVALUATION OF FOOD PRODUCTS
DescriptionThe analysis of scientific research in the field of food technologies has shown that mathematical modeling is applied in the following directions: adjustment of the modes of technological processes, development of compounding and quality evaluation of ready-made products, and also prediction of shelf life of new products during launching. Models of variance and regression analysis with application of methods of mathematical planning of experiment are most relevant in describing the processes of food production. The article contains the results of our own research about creating composition of fish preserves made of combined minced of fishes, bad-ripening and ripening in salting. The mathematical models of the dependence of organoleptic, structural-mechanical characteristics and characteristics of ripening of preserves on technological factors are presented. The dimensionless generalized index of quality was modeled and the composition of minced was optimized on the basis of its dynamics. It was established, that preserves which contain 42% herring Atlantic and 4,8% salt, have the best organoleptic, structural-mechanical and ripening characteristics. The regression model was developed, which determines the shelf life of wide range of fish preserves, depending on factors affecting it: storage temperature, acidity of the fill, proteolytic activity of the enzyme system of muscle tissue and also the speed of fish ripening, caused by addition of various functional and technological additives. Testing of the model shown, that calculated data of the shelf life of fish preserves correlate with the data obtained experimentally

ASSESSMENT METHODOLOGY OF THE LEVEL OF DEVELOPMENT OF THE BUSINESS ENVIRONMENT
DescriptionContradictory processes of transformation of market relations makes for a fresh look at the problems of formation and development of favorable business environment, serving as a catalyst for the effective functioning of the business sector. During the years of reform, transformations in the domestic economy has developed a full-fledged business sector, but the modern period is characterized by the search for new forms, methods and conditions for its further development, most of which forms a favorable business environment. A necessary condition for effective development of the business environment at the regional level it is monitored on the basis of complex quantitative and qualitative indicators. In this regard, it is increasing the relevance methodological developments in the assessment of the level of development of favorable business environment. The article suggests a methodical approach to the assessment of the business environment, which served as the basis of multi-criteria evaluation of a combination of factors affecting the business climate in the region. As a productive indicator is proposed to use the comfort factor of doing business. The main stage of the methodology is the formation of expert groups in the field of entrepreneurship and the definition of competence of each expert. The result is a matrix of criteria five indicators to assess factors influencing the business environment. Based on the assessment of the business environment of Stavropol territory is divided into five typological groups, characterizing district municipalities: areas with a very high level of development of the business environment, areas with high level of development, areas with a moderate level of development of the business environment, with low level areas with a very low level of development of the business environment. Thus, the developed approaches to the assessment of the level of development of the business climate, will allow to justify the participation of entrepreneurial structures in various regional programmes of support and development of entrepreneurship

SYSTEMATIC APPROACH TO THE ASSESSMENT OF HOTEL MANAGEMENT STAFF COMPETENCE
DescriptionTo deploy fully the potential of personnel competence is the key advantage of modern organizations in all businesses of the country. This is especially critical for hotel business because producing and consuming of this service is the inseparable process. The maximum deployment of potential of an employee competence can be the key competitive advantage for a hotel. To satisfy business needs we should be aware of skills and competences an employee should possess. This paper suggests the application of the Hungarian method to assess the personnel competence of an operating hotel. We also want to show the applicability and utility of this method in solving real problem of evaluating the personnel competence. To solve this problem we suggest using pairwise comparison to identify the most important sample competence, which we use as the basis for personnel competence matrix. Thus, hoteliers will be able to make their own objective assessment of the personnel competence level of 5 divisions of the hotel

SIMULATION OF HEXAGONAL TURBULENT FLOW IN THE NORTH POLAR REGION OF SATURN
01.00.00 Physical-mathematical sciences
DescriptionAs we know, currently, around the north pole of Saturn there is a large-scale hexagonal flow, with characteristic scales of length and speed - 120 m / s and 14,500 km respectively. This trend observed for more than 35 years, is the subject of many experimental and theoretical studies. In this study, we propose a model and discuss the numerical solutions of the equations describing turbulent flow in the planetary boundary layer around the north pole of Saturn. It has been shown that a small violation of the axial symmetry in geostrophic shear leads to the development of hexagonal patterns in a turbulent boundary layer. In addition, under the influence of Coriolis forces and turbulent eddy viscosity gradient in a turbulent boundary layer formed jet pressed to the bottom edge of the layer. These results are used to simulate the observed hexagonal flow around the north pole of Saturn. It is assumed that the small amplitude geostrophic flow is described by a sum of zero and the sixth current harmonic functions, which leads to the excitation current at the upper boundary of the planetary boundary layer. It is found that such excitation enhanced in the boundary layer and reaches a maximum in the jet pressed to the bottom border. This jet, circulating on the hexagon coincides with the region of origin of the cloud cover, which is registered in the experiments. This excitation mechanism hexagonal flow around the north pole of Saturn is confirmed by numerical calculations of three-dimensional non-stationary planetary boundary layer

MODELING OF CONTACT FORCES IN THE CONCENTRATED FORAGES COMPONENTS’ MOVEMENT IN RELATIVE SCREW DRUMS
DescriptionAnalytical research results of contact forces of interaction of concentrated forages components’ particles in their movement in relative screw drums are presented. It is shown that contact forces – the most difficult forces by their nature; result from stochastic (probable) collision of bulks particles and in particular of concentrated forages components’ particles. Therefore the main objective of this modeling – to describe the stochastic phenomena of the so-called conditional contacts of particles for which some assumptions are accepted, for example, in forcing of mass of concentrated forages components’ particles by the walls of the rotating relative screw drum in the radial direction there will simultaneously arise contacts caused by geometry of a screw drum, i.e. the property of its walls is pressure transfer in relation to the mass of particles in the direction of the modeled movement. Schemes of engagement of concentrated forages components’ particles contacting in the relative screw drum, the probable schedule of sliding speeds values change in their consecutive contacting, their density distribution are demonstrated

Description
In the article we have stated results of the monitoring of local populations of rare plans species in the territory of the nature monument (NM) of the Rostov region «Raznotravno-tipchakovo-kovylnaya steppe» (Zernogradsky district). Vegetation of NM belongs to the poor version of the Azov steppe, flora contains 291 species, including 13 rare species (Astragalus ponticus Pall., Bellevalia sarmatica (Pall. ex Georgi) Woronow, Calophaca wolgarica (L. f.) DC., Caragana scythica (Kom.) Pojark., Centaurea talievii Kleop., Crambe pinnatifida R. Br., C. tataria Sebeok, Crocus reticulatus Stev. ex Adam, Eriosуnaphe longifolia (Fisch. ex Spreng.) DC., Iris pumila L., Stipa pulcherrima К. Koch, S. ucrainica P. Smirn., Tulipa schrenkii Regel), included in the Red List of the Rostov region, including 6 species included in the Red List of the Russian Federation. In 2016 were specified the patterns of rare species distribution in NM borders, and also other important parameters of their populations (number, density, age structure, etc.). The group of rare plants species, included in the Red List of the Rostov region, in the territory of NM includes 65 % of their total number known in Zernogradsky district. The special sozological value of NM is determined by the large local populations of Calophaca wolgarica, Astragalus ponticus and Crambe pinnatifida. Local populations of all rare species in the territory of NM can be considered to be steady as inhabit here during last 50 years

CAYENNE, NEW HERBICIDE FOR FIGHTING WEEDS IN CROPS OF WINTER WHEAT
06.00.00 Agricultural sciences
DescriptionOne of the most destabilizing factors of crop production is weed infestation of crops. Despite annual herbicide treatment, weed infestation of crops of winter wheat remains high, with a predominance of annual dicotyledonous weed with a higher proportion of drug resistant on the basis of 2,4-D. We also notice increased range and density of perennial dicotyledonous weeds. New combinational herbicide called Cayenne, manufactured by LLC "Agro Expert group", which in its composition contains two active substances: thifensulfuron-methyl (500 g/l) and florasulam (170 g/l), highly inhibits both annual and perennial dicotyledonous weeds. According to the working program of the registrant's company we have tested Cayenne on crops of winter wheat in spring in the tillering phase and the formation of the second internode. It is shown that its use in doses of 0.025 and 0.035 kg/ha in mixture with 200 ml/ha of surfactant-Bit 90, W provides effective suppression of annual and perennial dicotyledonous weeds (90 – 100 %). The negative effect on the culture was not observed. At the same time, within 2-3 days after herbicide application we observed cessation of growth, chlorosis, dieback of growing points of weeds. Complete death was observed after 15 – 20 days
