INNOVATIVE TECHNOLOGICAL RECEPTIONS IN PRODUCTION OF AIR CRYPES
DescriptionIn modern food production, extrusion is an actual and effective variant of intensification of technological processes. Its essential advantage is the possibility of correcting the content of proteins, vitamins and minerals in the finished product. The analysis of works devoted to the problems of obtaining food products of valuable food composition by extrusion technology shows the importance of further work in this direction. The purpose of the work was to analyze the technological methods of producing snacks on a nut-and-grain basis, taking into account the need to obtain a complex of substances of daily requirements with a small volume of consumed food. In accordance with the purpose, the main tasks of the work were identified. To substantiate the expediency of producing grain crips balanced and enriched composition; investigate the chemical composition and substantiate the choice of raw materials for the production of crisps of high nutritional value; to offer techniques for improving the technology of obtaining extruded snacks; to develop recipes and to test the improved technology of obtaining food snacks on a nut-and-grain basis. In the course of the work, the qualitative composition of the main grain and auxiliary plant species was investigated. We studied the optimal technological parameters of the production process of air snacks and original flavor combinations. We established expedient extrusion conditions for obtaining a product with predetermined properties. Various parameters of the final air product obtained by optimizing the formulation components were added when blending CO2-extracts and some types of CO2-meal. The composition and properties of the investigated objects were evaluated according to generally accepted procedures. When creating graphs, optimizing the formulation composition and for static processing of the results of the research, mathematical methods were used. The technological parameters of the production process of air snacks from domestic raw materials and original flavor and biologically active additives are presented. Formulations of new snack products are proposed. Ways of optimization of the applied technology in order to obtain a product of higher nutritional value are presented

This article is devoted to the problem of network attacks recognition, which is essential for providing network security. A research of neural network efficiency has been held. Such metaeuristic algorithms as genetic algorithm, gray wolf algorithm and firefly algorithm have been applied for the neural network learning. The algorithms’ fundamentals have been described. Multilayer perseptrone with sigmoid activation function has been selected for the task of network attack presence check. Various configurations of the neural network have been tested in order to find the optimal number of layers and neurons per layer, which ensure the least error. Learning has been performed by minimization of the average squared error between the network’s output and its target value with the help of the listed algorithms. Genetic algorithm requires accurate parameter picking in case of any network’s architecture alteration. Moreover, it is not as fast as firefly and gray wolf algorithms. Gray wolf algorithm appears to be the most effective one. However, it loses its efficiency if the number of layers is increased. Firefly algorithm proves to be the most universal one. Although it is less effective than gray wolf algorithm, it provides the most exact output even if the network’s structure is changed

THE ISSUE SEARCH FOR THE BEST METHODS OF SELECTING THE OPTIMAL POLICY REPLACEMENT VEHICLE FLEET
DescriptionThis article analyzes the best practices of choosing the optimal policy for replacement of vehicle fleet. The problem of replacement equipment was revealed. For each of these methods we gave objective function, constraints. We have found the best method of optimal plan of replacing the vehicle fleet in the company, allowing us to obtain accurate, economically viable new equipment purchase plan during a certain period. We have selected a number of important factors that influence the choice of payment method replacement policy and built PivotTable methods and factors. The selected as part of the research methodology will significantly reduce the labor and time, which will lead to an increase in productivity of the enterprise as a whole. The article gives a practical justification for the need to address the problem of choosing the optimal policy of replacing the vehicle fleet

ANALYSIS OF QUALITY INDICATORS OF AUTOMATIC CONTROL SYSTEMS WITH NONLINEAR APPROXIMATION CONTROL LAW
DescriptionThe subject of research of this work was the study of the quality of control processes in a nonlinear automatic control system with an approximating the control law. In the known published works there are no results of such studies, which makes it difficult to synthesis a nonlinear control system for multimode objects in applied biotechnology, including technological objects of the agro-industrial complex. A comparative analysis of the quality of regulation in the transient and steady-state regimes is carried out. It is shown that the approximation method used for the synthesis of the nonlinear control law provides a linear dependencies in steady-state and close to them modes in combination with relay modes in transient regimes, which is a positive factor for improving the quality of regulation in multimode control systems. It does not necessary to determine the moments of switching the dependencies in the control law when changing modes

This article proposes an approach to teaching mathematics in high school, based on the application of application software packages, which is especially relevant in connection with attempts to transition in the upper grades to profile education, when the student chooses the direction of more in-depth study of subjects, based on his own inclinations. The substantiation of necessity of development of methodical positions and recommendations on use of packets of applied programs on lessons of mathematics in the senior classes of high school is given. The analysis of existing packages of applied programs for teaching mathematics in high school is carried out. During the research, packages used for solving mathematical problems are considered: MS ESCEL, STATISTICA, MATCAD. Known packages of applied programs are classified according to groups of applications in mathematics lessons. Approaches to the use of application packages in math lessons during the pedagogical experiment have been tested. The pedagogical experiment was conducted on the basis of the State Budget Professional Educational Institution of the Krasnodar Territory "Beloglinsky Agrarian Technical Technical School". The analysis of the results of approbation is carried out and recommendations are made on the application of application software packages in mathematics lessons in secondary schools

METHODIC OF KNOWLEDGE ASSESSMENT WITHIN THE FRAMEWORK OF THE AUTOMATED TESTING SYSTEM
DescriptionIn this article, we consider approaches to the transfer of knowledge to students and an objective semiautomatic assessment of knowledge. The characteristic features of the application and the possibility of using cognitive training methodologies and complex systems for testing skills and the theoretical base of trainees are analyzed. The problems of development of this direction and possible ways of their solution are described. The basic concepts are introduced and the existing methods of calculating the average score for checking the student's knowledge are considered, and a new approach to solving this problem is proposed. Based on the conducted researches it is offered to use the complex system of testing of end users, which includes testing, monitoring, collecting, analyzing and displaying the results of students/groups/ course. The main requirements for the creation of such a complex and the rules to be followed are formulated for a more objective assessment of knowledge. The article formulates and solves the task of discrete control in the thermophilic stage of the composting process. It is shown, that considering the relay control entity to maintain specified process conditions requires the organization of the sliding mode. We have solved the problem of minimizing the temperature deviation of the substrate from the set values and the deviation of the oxygen concentration in the gas phase of the bioreactor from the specified values. The article shows an algorithm to compute the discrete control of the composting process in the thermophilic stage. INNOVATIONS IN THE TECHNOLOGY OF DRY BREAKFAST PRODUCTS MANUFACTURING
DescriptionThe intense rhythm of people's lives in many countries has led to the need to develop and produce «fast food» products. They include dry breakfasts of a porous macrostructure in the form of rods, bars, and flakes, made from cereals, legumes, potatoes and dried fruits. Over the past 10 years, ready-to-eat foods that do not require heat treatment have become popular, the range of breakfast cereals has significantly increased, air grains, pads with filling, asterisks and rings have appeared. The global trend of consumption of slowly digestible carbohydrates predominates. Corn flakes and blown grain began to be used as supplements to soup instead of toast, served for tea and coffee. However, the problem of making and marketing specialized dry breakfasts has not yet been fully solved. The aim of the research is to expand the range of specialized dry breakfasts for people with high physical and mental loads. The tasks of modernizing technology and equipment for the production of dry breakfasts were solved. The methods of preparation for extrusion of easily oxidized in the air raw nuts were developed. Formulations of dry breakfasts for people with high physical and mental loads were developed. The objects of the research are analysis of existing technological schemes, grain, fruit and nut raw materials. We used classical methods of research to determine the composition of proteins, lipids and carbohydrates, as well as modern instrumental methods for assessing the qualitative composition of raw materials, semi-finished products and finished products. The research results include the modernization of technology and equipment for the production of breakfast cereals. Formulations of ready-made breakfast cereals with the addition of cereals, dry fruits and nuts have been developed, in order to improve the quality characteristics and nutritional value of the extrudates.
