THE STUDY OF THE EFFECTS OF RICE QUALITY ON THE EFFICIENCY OF ITS PROCESSING
Description
There were presented comparative analysis’ results of criteria rice quality used in Russian and international standards. Also there were shown summarized statistical analysis’ results of rice quality that was processed in 2013-2016 on rice mill plant at “Krasnodarzernoprodukt” Company. The purpose of research was to find factors that had influence on combining rice bulk effectiveness on specialized elevator. It was found that diapason of rice moisture content was quite small. Red rice content was ranging from 1.08 to 5.10 % with confidence interval of 1.98- 2.56 % that is evidence of small amounts of rice bulks with extreme high or low red rice content. Broken rice content varied in the wide range from 3.43 to 9.26 % with confidence interval from 5.84 to 7.26 % that shows necessity in length grading procedure applying for broken kernels removing at the elevator unit. Grain impurities content exceeded basic norm in 3-4 times that is a sign of low efficiency in the process of separation. During the treatment of rice bulks combined at the grain cleaning unit of rice plant broken rice cereals output varied in wide range from 3 to 9 % during single shift that is seems to be connected with kernels cracking increasing and rice moisture decreasing. Moreover, rice bran output also varied in a wide diapason from 10.2 to 17.0 % that could be explained by big swing in rice moisture, glassy texture and cracking of rice grains. According to our research it was investigated that current rice quality control system that is a base instrument of rice bulks forming for further processing is not quite efficient and as a result there should be created and implemented new methods and technical devices for quick and proper grain control that could assure stable technological regimes at different stages of rice treatment process and that would provide the best quality and the biggest output of rice cereals

A selection of food additives for the enrichment of waffle products was made. Food additive "Powder from tubers of Jerusalem artichoke" is distinguished by a high content of inulin - 46.21%. Low-fat sunflower lecithin contains a significant amount of phospholipids (98.29%). The influence of the joint application of food additives "Powder from the tubers of Jerusalem artichoke" and nonfat sunflower lecithin on the technological properties of the wafer test was studied. It is established that the introduction of the food additive "Powder from the tubers of Jerusalem artichoke" together with defatted sunflower lecithin, instead of the traditional soybean, allows to reduce the viscosity of the wafer test. When introduced into wafer dough, the dosage of defatted sunflower lecithin can be reduced, compared to soybean, from 0.4 to 0.2% by weight of flour

THE EFFECT OF PLANT FOOD ADDITIVES ON THE PROPERTIES OF WHEAT FLOUR AND DOUGH
Description
The article presents data describing composition of macronutrients and food additives "Apple Powder" and food additive "Pumpkin Powder" obtained from secondary resources processing of apples and pumpkins with innovative technology that ensures their high antioxidant activity. Introduction of the studied food additives in wheat flour provides a boost of its antioxidant activity compared to the control (wheat flour without any additives). We have revealed that the introduction of the studied food additives in wheat flour provides a strengthening effect to the gluten flour, while dietary Supplement Powder called "Apple" has a strengthening effect on the gluten of wheat flour compared with a dietary Supplement called "Pumpkin Powder". We proved a positive impact of food additives on the gas-forming ability of wheat flour and water absorption capacity of dough; at he same time, with the same dosage of additives, water absorption capacity of dough with the introduction of additives of "Pumpkin Powder" is higher than this figure with the introduction of the additives of "Apple Powder", due to the higher content of pectin in the additive "Pumpkin Powder " compared with the additive "Apple Powder", having a high water-holding capacity. We have found that the dough with the introduction of the investigated supplements has the best rheological properties in comparison with control samples. The obtained results allow us to develop evidence-based formulation and technological modes of production of bakery products enriched with antioxidant properties, with the use of food additives called " Apple Powder" and "Pumpkin Powder"

The article provides an overview of Express-methods of quality evaluation and identification of lipidcontaining plant raw materials (oil seeds) and its processed products (oil cakes, oilseed meals, vegetable oils, lecithins) using pulse method of nuclear magnetic resonance. Development of express methods of quality evaluation and identification of lipid-containing plant raw materials and products of its processing is a priority, as these methods are environmentally safe and also allow us to regulate technological conditions of refining processes, are characterized by low error of determination, i.e., high precision, and, in some cases, it is only possible to use because of its non-destructive effects on the analyzed sample. Currently, we can distinguish the following main directions of quality evaluation and identification of lipid-containing plant raw materials and products of its processing on the basis of the pulse method of nuclear magnetic resonance: assessment of quality and identification of oilseeds (sunflower, canola, flax, soybeans); evaluation of quality of products of processing of oil raw materials (cake and meal); the quality evaluation and identification of vegetable oils; assessment of the quality of the lecithins obtained from vegetable oils. The methods of quality evaluation and identification of lipid-containing plant raw materials and its products are patented and have several advantages: short time (5 minutes) spent on the implementation of the single analysis; eliminates the use of toxic chemicals; does not require special training of laboratory personnel; non-destructive character, which is especially important for oilseeds from the point of view of breeding work. On the basis of the conducted survey we can conclude that the pulse method of nuclear magnetic resonance has found wide application for assessment of quality and identification of lipidcontaining plant raw materials and products of its processing, through rapid capabilities, high accuracy and ease of analysis

Long-term storage of fruits can be achieved by means of decreasing microbial contamination of their surface as a result of fruits pre-treatment by biopreparations before dispatching for storage. In the current study patterns of influence of fruits pre-treatment with the “Ekstrasol” biopreparation in a number of concentrations of bioagent on the microbial contamination of their surface during storage are revealed. The “Ekstrasol” preparation is a biofungicide, containing the Ch-13 strain of Bacillus subtilis bacteria and their metabolites. As research objects there were chosen apples of a zoned in the Krasnodar region variety called Idared and pears of a zoned in the Krasnodar region variety called Conference, harvested in 2016. The apples and the pears were stored over a period of 6 months in the low temperature conditions. Samples were withdrawn every month over the period of storing. The species composition and quantity of the most prevalent microorganisms, potentially causing the spoilage of apples and pears during storing, were identified. The optimal concentration of the bioagent, which provides the maximal decreasing of microbial contamination of fruits’ (apples and pears) surface, is established – 106 CFU/g, dosage of solution – 1 ml per 100 g of fruit

To determine the mass fraction of linolenic acid in flax seed oil the authors developed a rapid method based on the pulse method of nuclear magnetic resonance with the use of NMR analyzers low resolution. This method has some significant advantages compared with the known method on the basis of chromatographic method for the determination of the mass fraction of linolenic acid in the oil extracted from the seeds of flax, namely, does not require additional sample preparation (extracting oil by solvent), eliminates the use of toxic chemicals, requires a much lower investment of time to conduct a single analysis, highly automated, and eliminates the influence of human factor on the research results. The method is based on the revealed correlation between the weighted average time spin-spin relaxation of protons contained in the triacylglycerols of the oil of the flax seed, and a mass fraction of linolenic acid in the seed oil at a temperature of 23ºc. In article results of research of influence of temperature on the weighted average time spin-spin relaxation of protons contained in the flax seed oil. Installed directly proportional linear relationship between the temperature of flax seeds and measured the average time spin-spin relaxation of protons oil contained in the flax seeds with the correlation coefficient is 0,930, the temperature change of the sample of seeds at 1 ° C leads to the change of the coefficient is 0.011 kt. The article provides experimental data, which help to substantiate the effectiveness and feasibility of application of plant resources, produced by the rubbing of the pears in the production process of puree as raw material for the production of secondary food additive. For the first time, with the use of pulsed NMR it is established that processing of secondary resources of pears processing in UHF EMF influence on the redistribution of bound and free moisture, i.e., the maximum transition was for linked moisture to free moisture, noted in the processing of secondary resources in UHF EMF with the rate of heating (increase in temperature) 0,4 °С/s to a temperature of 60 °С. It is established that such processing of secondary resources of processing of pears allows to increase the average speed of the subsequent IR-drying and reduce the time IR drying in 2 times in comparison with IR-drying of control sample (without pretreatment in UHF EMF). Pre-treatment of secondary resources of processing of pears to UHF EMF for the identified modes allows for their subsequent IR-drying to reduce the loss of vitamin C, 23.9% and P-active substances – by 20.6% compared with the control sample. We have developed technological modes of production of food additives from secondary resources of processing of pears, providing maximum preservation in its composition of thermolabile biologically active substances – vitamin C and P-active substances. On the basis of these studies, there was developed a set of technical documentation, including TU 10.39.25-423- 040801346-2016 "Food additive. Pear Powder" and a technological instruction for the production of food additives

WAYS TO PROVIDE STABILITY OF RAW MATERIAL DURING STORAGE

The article analyzes the ways of ensuring a stable quality of fruit in the process of storage. The patented methods of storage, realization of which allows increasing of storage life of agricultural products by means of using low temperatures, regulating the content of gaseous medium in the storage, creating hermetic storing conditions, treating with chemical substances, using biopreparations, were systematized. INNOVATIVE TECHNOLOGY OF DUALSTAGE OBTAINING RAW JUICE AND ITS PURIFYING IN SUGAR INDUSTRY
Description
The typical scheme of sugar beet processing, used at most sugar beet factories in Russia has not been fundamentally changed for several dozens of years. As a result, the performance indicators of domestic beetprocessing enterprises are below the world average. The article considers the technology of two-stage extraction and subsequent lime-carbon dioxide raw juice purification with the separation of the preliming sludge and carrying out the carbonation treatment in one step. The theoretical foundations of a two-stage extraction of sucrose from sugar beet cossettes are described and the main criteria for its implementation are given. The chemistry of calcium compounds upon activation of a suspension of saturation precipitation, returned to a progressive preliminary defecation, is shown. On that the increasing of sedimentationfiltration properties of the preliming sludge is based that allows its separation on the existing equipment in based. The theoretical premises for carrying out saturation in a homogeneous liquid-liquid environment are given and practical principles for their realization are described. The comparative evaluation of existing and improved sugar beet processing technologies is carried out. The improved technology makes it possible to reduce the amount of raw juice while improving its purity, thereby reducing the consumption of auxiliary materials, fuel and energy resources, simplifying the technological scheme while improving the quality of the purified juice, namely, its higher purity, achieved by reducing the degree of transition of high-molecular compounds in it and increasing the effect of destruction of reducing substances

Technologies of fruits storing known at the present time, solving actual problems – slowing down biochemical processes, inhibiting ethylene synthesis, do not provide fully the preservation of quality of fruits due to not taking into consideration the peculiarities of microflora of fruits and microbiological processes, taking place during storage. Purpose of the research: investigation of influence of complex treatment of fruits with electromagnetic fields of extremely low frequency (ELF EMF) and the biopreparation “Vitaplan” on changing of losses of biologically active substances in the process of longterm storage. Objects of the research: apples of the Idared variety and pears of the Conference variety, regionalized in the Krasnodar region. Mass shares of the vitamin C and P-active substances were measured in the process of storing. ELF EMF treatment was conducted on an experimental installation. Fruits were exposed to the action of electromagnetic fields with specified parameters. Complex treatment of fruits (apples and pears) with ELF EMF and the biopreparation “Vitaplan” before dispatching for storage allows preserving the biologically active substances – the vitamin C and P-active substances – to the maximum degree. Synergetic effect, appearing due to the complex action of electromagnetic field and the bio-preparation, allows decreasing the processing time in the electromagnetic field
