STUDY OF POLYMERIC MATERIALS PERFORMANCE IN FRICTION CONDITIONS WITH ICE AND SNOW
DescriptionThe problem of identifying of the most promising polymer materials for sledge sliding application. The comparison of materials is given: the bench tests of polyethylene, fluoroplast, steel and ultra high molecular weight polyethylene (UHMWPE) with different molecular weight and their composites are carried out. On the basis of research of polymeric samples on ice and snow friction in exploiting condition with the use of specially designed sledges was shown that GUR 4150 UHMWPE has the lowest mass volume and linear wear. Also in article the results of research of ice adhesion to different materials are presented. Adhesion research was carried out in low temperature conditions of air from -21oC up to -46oC and in cryocamera according method which was patented by Institute of oil and gas problems of SB RAS. The research showed that GUR 4150 UHMWPE has the lowest adhesion to ice. On the basis of obtained data the authors assumed that GUR 4150 is the most perspective materials for development of sledge sliding exploiting in Arctic conditions.

RESEARCH OF THE DEHYDRATION PROCESSES OF BIOPOLYMER SYSTEMS IN POULTRY PRODUCTS
DescriptionThe article presents the results of the study of the ratio of the water fractions, which differ on binding energy with the biomaterial in the composition of poultry products having various fabric and polymeric structure. The authors used the method of differential scanning calorimetry. The objects for the research were experimental and industrial samples of poultry products. We prepared the experimental samples by wet thermal treatment of broilers heads and feet at the pressure of 0.24 MPa. The objects for comparison were the products of industrial production of poultry meat: the paste of chicken meat with multicomponent composition (minced chicken, pork fat, water, pork liver, onions, wheat flour, soy protein, emulsifying, the taste and flavor food additives, color correction supplements); natural canned meat "Chicken in the own juice" (GOST 28589-90). The analysis showed that the investigated samples (broiles heads, broilers feet, multicomponent paste) were characterized by the similar values of the mass ratio of the water fractions at three stages of dehydration, the relevant sections of the curves based on the degree of conversion of the substance α from the heating temperature in logarithmic coordinates. The results can be use in the development of formulations of food modules for the production of emulsified meat products from raw materials, subjected to preliminary heat treatment. We expect that the positive effect will be to increase the degree of utilization of secondary raw materials in the processing of poultry in primary production, expanding the range of foods enriched composition due to the natural raw material sources, improving sustainability of raw material base of processing companies

INVESTIGATION OF THE PROCESS OF EVAPORATION OF CHOKEBERRY INFUSIONS
DescriptionFor the design of rotary-film evaporators of the technology for food production we need summary tables of performance parameters of the process. To obtain them it requires a significant amount of experiments that require a large investment of time and resources. Therefore the actual task is reducing the cost of designing of the technological process, due to the choice of optimal parameters of the rotor-film evaporator. This problem can be solved by conducting a small series of experiments aimed at identifying general mathematical dependences of the parameters of the processes of evaporation on the performance of the device. Based on the obtained dependencies it is possible to find design and selection of evaporators. The study proceeded from the assumption that the maximum thickening of the initial solution in the evaporator, it is possible while achieving the maximum possible temperature, the filing of the original solution in the apparatus and performance during repeated evaporation and infusions from the fruits of chokeberry. The calculation is performed taking into account the prevention of adhesion of evaporated solution on the walls of the apparatus and the rotor blades, which may reduce the quality of the end product. The data confirm the effectiveness of the method of repeated evaporation on the example of concentrating the water-alcohol extracts of black chokeberry
