THE QUALITY OF THE MUSCULAR TISSUE OF YOUNG GEESE

DescriptionThe article presents the materials of research on studying of influence of various levels of crude fat in the complete feed (CF) for the young geese of Lindovskaya breed on chemical composition and organoleptic quality of goose meat. In the experimental groups we increased the concentration of crude fat in the start and finish of the CF to 7.4 % and 6,85 %, respectively. As the lipid supplement, we used sunflower oil. It is established that muscle tissue of geese, consuming finishing CF with sunflower oil, has a more pronounced taste, odour, tenderness and juiciness. We may highlight the tendency to increase the proportion of monounsaturated oleic acid, in the background of the decrease of specific weight of palmitic acid in the fat muscle 60 day goslings who received the start and finish of CFs with the addition of sunflower oil

RESOURCE-SAVING APPROACHES TO THE POULTRY FEEDING

DescriptionThe experiment studied the use of an herbal component in feeding of young geese, consisting of hay meal and alfalfa juices coagulate. The replacement of 50 % of complete feed by the studied feeding stuff reduced the protein content in the diet by 9.9-14.9 % and increased the content of crude fiber 1.76-2.01 times. Gross weight gain in the experimental group decreased by 3.9 %, with an increase in feed cost by 17.1 %. However, carcasses of geese in experimental group increased absolute weight of muscles of the breast and legs by 28.6%, and the relative – 5.6 % (Р˃0.05). Using of herbal ingredients tended to increase the yield of dressed carcass by 4.8 %, while the share of internal fat and skin with subcutaneous fat was decreased. There were no differences in the chemical composition of poultry muscle tissue in the groups. Using of herbal ingredients decreased the cost of 1 kg of feed by 0.7 rubles, but the cost price of weight gain increased by 5.0 %. DESIGN OF THERAPEUTIC PHAGE COCKTAILS BASED ON T4-TYPE BACTERIOPHAGES: ADVANTAGES AND DISADVANTAGES
DescriptionIn the review, the stages of designing therapeutic cocktails of T4 type bacteriophages based on works by Harald Brüssow from Nestlé S.A. (Switzerland) are considered. The main stages of this process are identified: analysis of existing cocktails, selection of phages; creating a collection; cultivation of the host bacterium, multiplication of viruses; purification of the preparation; contamination testing; preservation, stabilization and storage; preclinical and clinical trials. H. Brüssow first studied the Russian drug " Coli-Proteus bacteriophage " of "Microgen" with the help of metagenomic analysis, electron microscopy and conducted its clinical studies. Prof. Brüssow considered the advantages of T4 bacteriophages for the treatment of Escherichia coli infections. Researchers studied methods of cultivation in Erlenmeyer flasks, in a bioreactor, in disposable sack cultivators for the propagation of viruses. For its purification the chromatography, centrifugation, filtration and polyethylene glycol precipitation were studied. To quickly check the contamination of phage cocktails, a mass spectrometry method is proposed. Researchers considered basic strategies, such as lyophilization, spray drying, the formation of microcrystals and microspheres to stabilize the preparations. They also reviewed the results of clinical trials of phage cocktails. We have listed the problems of selecting T4 bacteriophages from the point of view of modern knowledge. H. Brüssow and his colleagues carried out an interesting work on the construction of phage cocktails based on T4 type bacteriophages, and also revealed the problems of the current state of phage therapy

DescriptionThe obtaining of high-quality meat is impossible without providing of full value feeding of agricultural animals in the combination with the maintenance of conditions of their feeding. In farms of the Krasnodar region the seeding of forages with molds varies from 103 to 107 КОЕ in 1 gm of forage. There was conducted the study of influence of feeding of animals with mold mixed fodders on the seeding with microscopic fungus of tissues of inner organs. There was carried out the slaughter with the aim of study of meat quality, immune hematological large part of intestines. There were selected the samples of meat and inner organs on the seeding with microscopic fungus. There was determined that in tissues of inner organs of animals which during 4 months were on the ration including the mixed fodder with general seeding with mold fungus 105 -106 КОЕ in 1 gm of forage, there were found the spores of molds. Also there was determined the intensity of animals’ growth of first and second groups reliably did not vary (p>0,5). There were worked out the ways of improvement of sanitary condition of fodders by the means of introduction of the salts of microelements into rations such as bluestone and ferrous sulfate with the addition of probiotics KM3(cultured milk fermentation including Streptococcus lactis, Lactobacillus acidofilum) influencing the growth of pigs, the condition of their health and the quality of meat raw at the using of fodders dirty with micromycets. The consumption of fodders attacking with microscopic fungus with the addition KM3 showed that the lacto- and bifidus bacteria KM3 suppressed the development the pathogenic microflora of gastrointestinal tract of pigs. There were determined the optimal doses of the introduction of detoxicants in fodders affected with molds of storage. The positive effect in average amounted 8%

ISOLATION AND SELECTION OF THE NON TRANSDUCING E. COLI BACTERIOPHAGES FOR ANTI-COLIBACILLOSIS DRUGS
DescriptionThe isolation of E.coli phages from samples of natural and waste water obtained during expeditions in the different regions of Russian Federation was carried out. The obtained phages (286 isolates) were tested for their ability to lyse the pathogenic strains of E. coli – pathogenic agents of pig colibacteriosis in Krasnodar region. The study was conducted of their ability to phage transduction, the molecular-genetic characterization and biotechnological parameters of selected bacteriophages. For first experimental design of veterinary drugs was selected 5 coliphages having no ability of plasmids transduction. It has been shown that all the investigated phages are representatives of T4-type phages of family Myoviridae. ACTUAL PROBLEMS IN ORGANIZATION OF FEEDING IN MODERN CONDITIONS

DescriptionModern pig farming is a leading global livestock industry, but the organization of adequate balanced feeding is actual for the industry. Digestibility of metabolizable energy of feed depends on various factors, including the content of non-starch polysaccharides, which have a negative effect on the digestibility of key nutrients of the feed, lead to a decrease in growth rate and conversion efficiency of nutrients. Enzyme preparations which composition generally includes Xylanase, cellulase, β-glucanase activities, may avoid the negative impact of non-starch polysaccharides. Today's promising preparation that combines the functions of two feed additives - feed enzyme and probiotic, is an enzyme preparation Cellobacterin that, due to the particular organization of the enzyme complex, increases the digestibility of barley grain and effectively effects on sunflower meal. As a probiotic preparation it inhibits the development of pathogenic microorganisms and promotes the formation of beneficial microflora in the digestive tract. The introduction of Cellobacterin enzyme preparation into the compound feed with a high content of barley grain and sunflower meal increases the body weight of young pigs by 4.8% and reduces the cost of feed per 1 kg of live weight gain. The results of hematological studies found no significant deviations from the physiological norm in the morphological picture of the blood in experimental animals. The group, where Cellobacterin was added, showed higher vitamin A content by 2.8% as compared to the control, while vitamin E is found in both groups on the same level. Based on the results of the research to improve the productivity and growth rate in compound feed based on barley and sunflower meal with higher fiber content, it is recommended to include in the compound feed Cellobacterin enzyme preparation at the rate of 1 kg per 1 ton of feed

PROTEIN OF MEAT AND BONE MEAL FOR PIGS

DescriptionThe modern requirements of intergovernmental standards to the quality and safety of livestock produce provide for the use of highly productive animals capable under small expenses to produce more the high quality produce. In particular, at the formation of meat productivity at pigs the great significance has an achievement of optimal digestion and assimilability of consumed fodder means. In the connection, the study of digestion of meat and bone meal from slaughterhouse wastes of cattle (MCM) and poultry (MCBM) presents the scientific interest. In the fodder experience on the growing pigs with the fistula of iliac intestines there was investigated the digestion of two types of meat and bone meal from slaughterhouse wastes of cattle (MCM) and poultry (MKBM). The iliac accessibility of amino acids of meat and bone meal found itself too low: 49,3 % - 69,3 %. The accessibility of general protein reliably did not differ from the average accessibility on main amino acids - 61,5 %. PROBLEMS AND PROSPECTS OF TRITICALE IN FEEDING

DescriptionIn the decision to establish solid fodder resources in the arid parts of Southern Russia triticale should take its rightful place. It must be introduced instead of winter wheat, inferior to the yield, quality and output of nutrients per unit of area. It is necessary to maximize the potential of new varieties of winter triticale, as the productivity of animals largely depends on the varietal characteristics of the culture. Triticale has attracted special attention by its ability to exceed the parental forms on productivity and quality, and resistance to adverse soil and climatic conditions and the most dangerous disease is not inferior to rye. The generalized data of most researchers characterize triticale as a factor in increasing the productivity of animals and reducing the cost of feed per unit of output, although in some cases there is a negative trend in reduction of productivity by the replacement of cereal grain components for winter triticale. Due to the enrichment of compound feed with triticale grain by enzyme preparations and enzyme-probiotic supplements we can greatly increase productivity, digestibility of main nutrients, improve meat quality and reduce the cost of feed per unit of output. We can increase the productive effect of triticale grain by extrusion. In physiological metabolic experiments, it is found that by extruding of triticale grain the digestibility of the main nutrients is increased by 1.3-1.8%. Extruding of triticale before feeding promotes slaughter yield and increases the levels of protein in the muscle. The use of triticale in rations instead of wheat reduces the cost of the diet, the cost of the manufactured products and increases profitability. The study of achievements of scientists from various scientific organizations necessitates the further breeding work with the culture of triticale and requires the development of innovative technological methods that can help reduce the concentration of pentosans and beta-glucans in the grain

THE USE OF TRITICALE IN THE DIETS OF YOUNG GOSLINGS

DescriptionThe article presents the results of studies on the use of different amounts by weight of triticale grain in feeding of young geese raised for meat. In the first group the wheat grain was 50% replaced by triticale grain, and in the second group the wheat was completely replaced by triticale grain. As a result of the experiment it has been found that the replacement of wheat by triticale in complete feed for geese provides a high growth rate but at 50 % inclusion of triticale grain the live weight at the end of the experience was110.8 g or 3% higher, as compared with the second group. It should be noted that up to 49 days old geese receiving compound feed with the 100 % replacement by triticale grain had a higher body weight. Complete replacement by triticale grain favoured the increase of carcass yield by 2.2% and decrease of body fat by 68.7 g as compared with the first group. Muscle tissue of the goslings fed the complete feed with complete replacement for triticale grain was characterized by 1% lower caloriс content than the goslings of the second group. According to biochemical composition of blood, all designed rations ensured normal metabolism in the fattened geese. The inclusion of triticale grain into the complete feed for young geese reduced their costs in the second group by 2.9%. But as a result the higher profit by 18.75 % was in the first group, which contributed to increased profitability by 2.4%. USING YOUNG GROWTH OF THE HORNED CATTLE FOR PRODUCING ORGANIC BEEF FOR BABY FOOD

DescriptionExperimental data were obtained to draft a national standard for organic production of meat from calves of meat breeds to produce baby food in the new conditions of development of the meat industry. Research results have shown that Aberdeen-Angus meat breed cattle meets the national standard of RUSSIA 52478-2005 for raw meat for baby food due to chemical composition of meat and its quality
