A thermal physical and mathematical model of laser cladding with TiNi on steel was developed which allows us to monitor the formation of the structure and the properties of the surface layer. A description of the model included assumptions and simplifications; analysis of the energy balance; numerical modeling of thermal processes; evaluation of the temperature distribution; experimental verification of the obtained solutions. The composition of the steel and TiNi alloy was examined as a two-layer material with different thermal characteristics. The energy balance of the system was described with a heat equation in a three-dimensional form. The main channels of the radiation energy costs were taken into account: absorption surface of the product, loss owed to the reflection surface, energy absorbed by the coating which did not come down to the base material. To solve the differential equation of heat conduction we used the Fourier integral method. In assessing the temperature distribution we have reviewed a dimensional problem when exposed to a point source of the Gaussian distribution in a pulsed mode. Computer calculations used MathCAD graphs of temperature changes at different depths of the TiNi layer and the steel substrate. The results obtained allowed us to develop the recommendations for optimizing the technological parameters of laser cladding of TiNi. The simulation of thermal processes significantly reduces the time and resources required to develop the technology, allowing prediction of the quality of the surface layer during the development of the technology and promoting the adoption of efficient technical and technological solutions

THE EFFECT OF PLANT FOOD ADDITIVES ON THE PROPERTIES OF WHEAT FLOUR AND DOUGH
DescriptionThe article presents data describing composition of macronutrients and food additives "Apple Powder" and food additive "Pumpkin Powder" obtained from secondary resources processing of apples and pumpkins with innovative technology that ensures their high antioxidant activity. Introduction of the studied food additives in wheat flour provides a boost of its antioxidant activity compared to the control (wheat flour without any additives). We have revealed that the introduction of the studied food additives in wheat flour provides a strengthening effect to the gluten flour, while dietary Supplement Powder called "Apple" has a strengthening effect on the gluten of wheat flour compared with a dietary Supplement called "Pumpkin Powder". We proved a positive impact of food additives on the gas-forming ability of wheat flour and water absorption capacity of dough; at he same time, with the same dosage of additives, water absorption capacity of dough with the introduction of additives of "Pumpkin Powder" is higher than this figure with the introduction of the additives of "Apple Powder", due to the higher content of pectin in the additive "Pumpkin Powder " compared with the additive "Apple Powder", having a high water-holding capacity. We have found that the dough with the introduction of the investigated supplements has the best rheological properties in comparison with control samples. The obtained results allow us to develop evidence-based formulation and technological modes of production of bakery products enriched with antioxidant properties, with the use of food additives called " Apple Powder" and "Pumpkin Powder"

06.00.00 Agricultural sciences
DescriptionThe presented research is devoted to the development of the import-substituting production technology of the proteins dresser for food from local vegetable resources, in particular, of lupine. Lupine seeds contain about 40% of protein rich in all irreplaceable amino acids. Protein of lupine noticeably differs from protein of soy in inhibitors content, and namely, proteases, that does not cause allergic reactions. The main part of oil composition of oil of lupine is maid up of linolenic, linoleic and olein acids. Use of lupine seeds in production of complex raw structure products will allow to increase the biological value of a proteins component of a traditional type of raw materials of phytogenesis and to reduce the available deficit of protein. It is a will-know fact, that lupine is added to the recipes of buns, fermented milk and cottage cheese products, rich crackers and long cookies. Technologists have recently received a certain concentrate from lupine seeds of high biological value, and a pastelike concentrate of lupine which can be used as a filler in milk, meat, baking and confectionery industries is being under development. The results of the research show that seeds of lupine can be considered as one of the perspective sources of white and competitive ingredient for developing new recipes and technologies of different types of multicomponent food. It is necessary to continue the research on creation of different types of food with use of lupine seeds. Thus, the products received from lupine seeds can be used as raw materials for improvement of quality of food and as additives for creation of compoundings of new types of foodstuff
