Description
The NP-problem of discrete optimization of consumption of non-renewable resources is considered in the article. It is offered to use transitions of NP-system conditions on the complete graph with number of vertexes, equal to quantity of discrete resources, for the problem decision. The purpose of such system is construction of a chain of the predetermined length and the minimum weight on the complete graph. The length of a chain defines quantity of the consumed resources. The problem factor is factorial growth of number of variants of chains on graph at linear growth of quantity of resources. The main idea consists in a finding of statistical regularities of ranks of transitions of NP-system at construction of chains with the minimum weight on graphs of the small size. Use of ranks allows to abstract from concrete weights of transitions, which are variables for each problem of optimization, and to find the patrimonial feature of all optimum decisions. It is offered to use the found regularities to solve the problems of the big dimension. As a result of researches, it has been defined that probabilities of ranks of transitions are described by geometric distribution. In the article, the algorithm of definition of parameter of geometrical distribution for a rank of each transition depending on the initial and consumed quantity of resources is presented. Realization of a method of generating of suboptimum chains is based on use of generators of the pseudo-random numbers setting values of each rank of transition of NP-system according to geometrical distribution of probabilities. It is offered two variants of generators of ranks of chains to use. Computer experiment has shown useful effect of an offered method at the decision of problems of small and average dimension

The purpose of research – the development of models and methods of multiparametrical diagnostic the research activities of scientific and pedagogical collectives of educational institutions. The problematics of research is improving the quality and productivity (the efficiency) of research activities in educational institutions. The problem of research is the question of how to objectively and comprehensively (in a complex) diagnose the research activities of scientific and pedagogical collectives? The urgency of solving specified problem is caused by the need to ensuring a close relationship between research, methodological and educational activities in educational institutions. We have also to consider the increasing role of clusters in the Russian economy, cooperation and integration levels (steps) a system of continuous education, etc. The authors identified the parameters reflecting significance of research activities of the scientific and the pedagogical collectives for the scientific and educational community (social megaenvironmental). When allocating indicators the authors took into account that science - the social and cultural phenomenon and the social institution, and the most important aspect of the significance of the research activity - in the innovative development of various spheres of human activity. The applied methods of research: mathematical modeling; methods of the theory of graphs, sets and relations; methods of "artificial intelligence" and the multi-parameter analysis of systems; methods of quality control (theory of latent variables). The article shows that for the essential oil industry of the Russian Federation to solve the problems of import substitution it is urgent to develop effective technology to extract fatty oil from the crushed and deprived of ether by water vapor coriander fruits. The existing technologies for obtaining fatty oils from deprived of ether coriander were considered. It is shown, that at small-scale enterprises it is most advisable to remove fatty oil by screw pressing. A brief analysis of main factors affecting the completeness of oil extraction in screw presses was carried out. The conclusion about the necessity of preparation of deprived of ether coriander for extraction with the purpose of increasing the yield of fatty oil was made. It is shown, that one of the stages of such preparation is the removal of part of the shell from deprived of ether coriander, which also increases the nutritional value of the oilcake. Fractional composition of deprived of ether coriander after extraction of essential oil by water vapour and drying was investigated by sieve analysis method. On the basis of obtained data, prior to separating the shell by pneumatic separation, it is recommended to separate deprived of ether coriander into three fractions by size – coarse (riddling from the sieve with the diameter of 1.8 mm), medium (riddling from the sieve with the diameter of 1 mm) and fine (undersize from a sieve with a diameter of 1 mm). Component composition of the coarse fraction of deprived of ether coriander was studied. It was found, that the content of the shell in this fraction is 36%, which indicates the possibility of its effective separation by pneumatic separation

THE INFLUENCE OF THE FRACTIONAL COMPOSITION OF CORIANDER ON ITS TECHNOLOGICAL PROPERTIES
DescriptionThe article investigates a fractional composition and quality indices of industrial raw materials of coriander in the North Caucasus economic zone of cultivation. It was found, that losses of essential oil in raw materials associated with the splitting of the fruit reach 23.4 %. Essential oil from split fruits is enriched with valuable components - linalool, geraniol, geranyl acetate. Changes of the component composition of essential oil from split fruits cause the following changes of organoleptic and physicochemical quality indicators in comparison with the oil from whole fruits: color from almost colorless intensifies to a pale yellow; in a spicy oil smell, similar to the smell of linalool, there appears a more intense shade of geraniol and geranyl acetate; acid degree value in oil from fruitlets and fruitlets without the shell increases, respectively, by 38.5 % and 65.4 %; ether index increases by 19.2 % and 97.5 %, respectively. It is recommended to use oil from split fruits to correct the composition of coriander essential oil in order to increase the content of linalool with a simultaneous decrease in the content of undesirable components – hydrocarbons and camphor, or, preferably, to separate valuable components – linalool, geraniol. It was proved expedient to separate split fruit factions during the post-harvest treatment, with their primary processing and intended use of the obtained essential oil

INFLUENCE LECITHIN AND RADIAMULS SORB 2345K ON THE RHEOLOGICAL PROPERTIES OF CHOCOLATE MASS
DescriptionLecithin and sorbitol tristearate (Radiamuls Sorb 2345K) are the emulsifiers used in the manufacture of chocolate products. The effects of various blends of lecithin and Radiamuls Sorb 2345K when added in concentrations up to 14 g / kg on the rheological properties of molten dark and milk chocolate were determined by rotational rheometry. The results show that regardless of the total amount of emulsifier, yield strength, both dark and milk chocolate most effectively reduced by applying a mixture of approximately 30% lecithin and 70% RADIAMULS SORB 2345K. Regardless of the concentration of the emulsifier proportion RADIAMULS SORB 2345K in the mixture can be reduced to 25% without a significant increase in equilibrium viscosity milk chocolate. With respect to the total emulsifier dosage in the range of 4 to 6 g / kg, the lowest values were found for the viscosity of the mixture letsitin- Radiamuls Sorb 2345K 50:50 for dark chocolate and milk chocolate to 75-25, respectively. when using the mixture of lecithin-SORB RADIAMULS 2345K there are various possibilities for adjusting the rheological properties of chocolate, confectionery coatings and fillers on fat basis. The results obtained show that the confectionery mass flow can easily be adapted to the specific processing needs, thereby improving product quality and production efficiency increases
