MANAGEMENT OF CHOCOLATE MASS STRUCTURE CREATION
DescriptionIn the article the processes of chocolate masses, which are determined by the kinetics of the interaction of the dispersed phase through the layer of the dispersion medium, i.e., determined by surface phenomena at the interface, were examined. The results of the study of surface-active properties of sunflower activated phospholipids and dietary supplements "Vitol", which were performed on the model of structured systems. A theoretical and experimental study of the development of practical recommendations for the use of surface-active substances in the production of chocolate masses is given. The ability of dietary supplements "Vitol" and PAF to control the properties of structured disperse systems, which include chocolate mass, was found out. It is shown that the input of sunflower activated phospholipid and dietary supplements "Vitol" to chocolate masses in certain quantities leads to a significant change in the nature of the deformation behavior of chocolate masses. The behavior of thin layers of cocoa butter, PAF and BAA "Vitol" on various liquid surfaces was introduced. The study was carried out by monolayers. The obtained results showed that increasing the pH of the substrate a surface pressure increases, and the film stretches and tends to spread. It has been shown that the injection of surfactant to cocoa butter film facilitates the spreading of water on cocoa butter. It is found that PAF and especially BAA "Vitol" pose the greatest surface pressure, and the most stable and dense layers comparing to other surfactants. Study of the properties of thin layers of cocoa butter and BAA "Vitol" liquid surfaces showed that dietary supplements "Vitol" significantly increases the ability to spread cocoa butter films on the surface of the water

LINGUOPRAGMATIC ASPECTS OF KINEME VERBAL REPRESENTATION IN FICTION LANGUAGE
10.00.00 Philological sciences
DescriptionIn this article the linguistic-pragmatic problems of kineme verbal representation in literary text space are examined. The authors interpret the concepts of "speech act illocutionary force" and "performative utterance", which are becoming more widespread within the frame of pragmatic theory, speech act theory being the very core of it. The authors emphasize the kinemes which are used attended by verbal utterance. First, they complement verbal part, serving as speech act illocutionary force marker. Secondly, kinemes duplicate verbal utterance information and together with verbal part of the utterance create speech act illocutionary force. The authors draw special attention to non-verbal kinemes as they carry the entire "message", serving as speech act illocutionary goal markers. In addition, kinemes as any other signs undergo alterations under social and economic, cultural conditions and convey culture-specific and universal concepts of Russian and French kinesics systems. These characteristics are foregrounded in cross-cultural communication, in connection with complexity of denotation object construal and sign-oriented similarity establishment

STRUCTURAL AND FUNCTIONAL CHARACTERISTICS OF HUMIC ACID SOILS OF THE KRASNODAR REGION
DescriptionThe structural and functional properties of humic acids of different types of poorly studied soils of the Krasnodar Region: ordinary black soil or chernozem (carbonated), meadowish chernozem and gray forest soils are investigated. We define the type of humus of the soil samples studied as fulvate-humate. Using traditional indicators of humus soil conditions the regularities of soil and ecological processes involving organic matter in soils under natural and anthropogenically factorial changes in the monitoring sites are revealed. The relationship of the optical properties of humic acids with the intensity of the processes of transformation of humic substances by increasing the depth of the soil sample is shown. By NMR spectroscopy, IR spectroscopy, and spectrophotometry in the visible spectrum differences and similarities in the structure of macromolecules of humic acids in soil samples. In terms of soil contamination with oil in a field experiment, on the monitoring site we have set a trend towards to redistribution in the ratio of functional groups of humic acid macromolecules: the proportion of aliphatic fragments increases. We have revealed an increase in the share of the mobile fraction of humic substances in terms of oil pollution. The article has the most suitable justification for these processes. The results can be used for prediction the environmental state of the soil under anthropogenic pollution

TOPONYMICS OF THE KUBAN REGION IN HISTORICAL AND CULTURAL HERITAGE OF THE GREAT PATRIOTIC WAR
DescriptionQuestions, which are considered in the article, have been connected with the role of the Great Patriotic War in the geo- graphical, administrative and territorial name changes in the Kuban region. It is pointed out that the place names are valuable research material for the most complete study of the problem of historical and cultural heritage of the Great Patriotic War. It is noted that after the Great Patriotic War the situation, where many of the new names of geographical and administrative-territorial objects went counter to the traditional main function of the place name - address and its purpose-to help orientation in space, continued. It is shown that politically sensitive "military" place names, being an important element of the Soviet propaganda and agitation, were necessary for the ideological support of the authorities, but at the same time, allows you to save memory of the Great Victory. "Military" toponymy, which has prevailed since the end of the Great Patriotic War , carried out a living link with the past present and future. New post-war name of streets, squares, parks, alleys of cities and villages of Kuban dedicated to heroes and events of the Great Patriotic War, helped to preserve a sense of patriotism and belonging to the victory over fascism. The conclusion is that the central government continued to use after the Great Patriotic War the place names as one of the new genres of advocacy and created a new concept of "military" place name, one of the essential component of which is a moral burden that was to have political overtones

Description
The article analyzes intellectual methods of image comparison. We give a brief description of existing methods: metric, topological and stochastic designed to solve this problem, indicating their advantages and disadvantages. This method is based on comparing of images by means of separation of the given domain into segments and calculation of pixels having certain optical density. The illustration example is presented. A computer program was created to use this method. The value of the segment is given by the operator with following limits: more than 3 single pixels and less than half of chosen square of image. The program makes up a segmental matrix of the image, which is compared in some interval of time to the current matrix. This method is used for interval monitoring of objects from the same point of observation

ELEMENTS OF CONTROL OVER HIERARCHIE SYSTEMS WITH ASSUMED HIERARCHY
DescriptionThe article presents a mathematical model of control over dynamic hierarchy system. The model was proposed for dealing with systems with assumed order in the technical problem of predicting destructions depending onto the amount of defects on different scale levels. The problem of the closest to a certain point of shelf life of hierarchy system is solved. The example of approach control during the given time is given. The problem concerns mathematic programming. Formulation of multi-parameter vector optimization criteria (improvement) with its own hierarchy and the formal exercise of multi-criteria optimization of the model parameters. The research can achieve clarity about the conditions under which the structure is preserved. Managing sustainable development system with a given level of the hierarchy for the technical systems can only be achieved in keeping

In Russia, as well as in foreign practice, classic yogurts are more required. Depending on the value of imported dry starters, the proposed technology allowing reduction in their quantities in yogurt technology is very crucial. It will affect the cost of the finished products. In yogurt technology, the possibility of using physical techniques, with the purpose of intensifying the process of producing yogurt, is very little reflected. Pre-activation of the leaven by electromagnetic field – lower frequency before fermenting in the production of yogurt is one of the technological tricks that speed up the fermenting process and reduce the quantity of starters. The advantage of the proposed technology is its ease of implementation, not requiring additional cost of electricity and also enhanced maximum reduction of additional chemicals which are used as raw materials to create a special environment for the growth of microorganisms belonging to the leaven. In this work, the overview of the existing principles for accelerating the fermentation process of milk is given. In this work, the research results of accelerating technology of fermenting milk for yogurt are presented. Mathematical process of experimental data enables the optimization, fermentation process using leaven FD-DVS YF-L812 10Yo-Flex. The optimal temperature and duration for the maximum acceleration of the process of obtaining yogurt at a given frequency of electromagnetic field are identified. We have given organoleptic characteristics of yoghurt prepared using the activated ferment
